Mixed Berry Coffee Cake

This mixed berry coffee cake is simple to make and is completely customizable. You can choose from a wide range of frozen fruits such as raspberries, blueberries, strawberries, and cranberries and find what tastes best. This recipe uses a blend of blueberries and cranberries which gives the cake that delicious sweet-sour flavor. For this mixed berry coffee cake recipe, I used frozen fruits, but you can use fresh if needed.

It is helpful to have a grater when preparing this recipe.

Ingredients

  • 1 egg
  • 1/4 cup melted butter
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 1/2 cup flour
  • Package frozen mixed berries (16oz pack)

Instructions

  1. Combine egg, butter, 1/2 cup sugar, baking powder, vanilla, and flour to form the dough
  2. Once well combined, split the dough in half and put one half in the freezer for 30 minutes
  3. With the other half, roll out the dough and place it in a lightly buttered baking dish
  4. Mix 1/4 cup sugar with frozen berries and add on top of the dough
  5. Using the medium side of a grater, shred the previously frozen dough over the fruit
  6. Bake at 350 F for 45 minutes or until golden brown
  7. (Optional) Dust top with confectioners sugar
