Easy Lemon Bars

These vibrant lemon bars are surprisingly easy to make. With just four main ingredients, you might already have all these ingredients in your kitchen already!

These lemon bars are my go-to recipe on a cold winter day. I love enjoying these treats with a warm cup of chamomile tea. The soft texture of the lemon filling melts in your mouth and contrasts perfectly with the slight crunchiness of the crust. If you like a bit of extra sweetness and color, a raspberry jelly topping suits this dessert perfectly. I highly recommend that you try this recipe for yourself!

Ingredients

Crust

  • 7 tablespoons melted butter
  • 1/3 cup sugar
  • 1 1/2 cup all purpose flour

Lemon Filling

  • 4 eggs
  • 1/2 cup lemon juice ( ≈2 lemons )
  • 1/3 cup sugar
  • 1 tsp lemon zest
  • 1 tbs all purpose flour

Raspberry Spread Topping (optional)

  • 1/2 cup fresh raspberries
  • 1/4 cup sugar

Instructions

  1. Mix butter, sugar, and flour until the dough forms a crumbly consistency.
  2. Transfer dough to a parchment paper-lined 8×8 baking pan. Smooth out dough using a large spoon until it has flattened.
  3. Bake dough in the oven at 350° F for 30 minutes or until golden brown.
  4. In a medium-sized bowl combine eggs, sugar, lemon juice, lemon zest, and flour.
  5. Once the crust has baked, pour the egg, lemon, and sugar mixture on top of the crust.
  6. Bake again at 350° F for 20 minutes or until the lemon filling has set.
  7. Remove the lemon bar from the baking pan and allow it to cool before slicing.
  8. (optional raspberry topping) In a small saucepan on low heat simmer raspberries and sugar until the mixture becomes jelly-like. Spread onto lemon bars.
