Easy Frozen Berry Muffins

Ingredients

  • 1/2 cup unsalted butter melted
  • 3 cups flour
  • 2/3 cup sugar
  • 1 1/2 cup milk
  • 2 eggs
  • 2 tsp baking powder
  • Around 2 cups mixed berries

Instructions

  1. Combine eggs, butter, milk, and sugar in a large bowl using an electric mixer.
  2. In a seperate bowl, combine flour, baking soda, and baking powder. Using a flour sifter, sift all dry ingredients into the egg, butter, milk, and sugar mixture. Doing this helps add more air into the dough making the muffins fluffier.
  3. Slowly mix all ingredients together until well combined.
  4. Using a spatula, slowly fold in frozen berries into batter until combined well.
  5. Add cupcake paper or butter to muffin tin and pour batter leaving a slight space on top.
  6. Bake at 375º F for 30 minutes or until golden brown.
  7. Allow muffins to cool and enjoy.
