Easy Breakfast Crepes

There is no better way to start your day than with these easy breakfast crepes. These homemade crepes are thin and just melt in your mouth. You can serve it with jam, fresh fruits, Nutella, and sweet cheese filling (see below). For this simple recipe, you will only need 6 simple ingredients.

These French Style pancakes can be customized to your liking by pouring more or less batter into the frying pan. This customization makes crepes such a popular breakfast choice around the world.

This recipe is simple for cooks of all levels. It is helpful to have an electric mixer on hand for this recipe as well. For frying, I found that having a cast iron skillet works best, however, it is not required.

Some Options For Fillings

Farmers Cheese Filling

  • Around 6 oz farmers cheese (you can substitute for cottage cheese if needed)
  • 3 tbs cinnamon
  • 1/8 cup sugar

Combine all ingredients well and serve inside of crepes

Easiest Homemade Berry Sauce Filling/Topping

  • 2 cups frozen mixed berries (best if slightly melted)
  • 1/2 cup sugar

In a small saucepan simmer all ingredients and stir continuously until the mixture begins to thicken. Serve with homemade crepes.

Ingredients For Crepe Batter

  • 1 cup all purpose flour
  • 3/4 cup whole milk
  • 2 large eggs
  • 2 tbs melted butter
  • 1/4 cup sugar (optional)
  • 1/2 tsp salt
  • Cooking oil for frying

Instructions

  1. Using an electric mixer, combine eggs, milk, and butter.
  2. Add in flour, sugar, and salt and mix until all ingredients are well combined.
  3. Heat medium sized cast iron skillet and add your cooking oil of choice.
  4. Once oil has warmed up, use a ladle to pour about 1/5 cup batter onto pan. If possible move pan around in circular motion to evenly distrubute batter.
  5. Allow crepe to fry until edges begin to turn golden, approximately 2 minutes on each side depending on the thickness.
  6. Once fully cooked on both sides, remove from pan and spread filling of choice inside.
  7. Serve while still warm for the best taste and enjoy.
